Assalamu Alaikum wa Rahmatullah,

A few answers, if you please;

what does the following mean?

كيف حالك
I know this means 'how are you' but what does it literally mean? Is the following correct?

كيف= How

حال= situation/condition/circumstance (possessed)

ك= You, singular, (possessor and genetive)
(masculine would be 'Ka' and Feminine 'Ki')

So does this take the possessive structure, 'how is the health of you'?

I have also come across the following phrase.

كيف حالك أنت

I can't make sense of why أنت is also added if ك is already there?

Yes you are correct in your translation of كيف حالك to an extent. The better way to literally trasnlate would be to say 'how is your condition' i.e. how are you.

As for the second question, أنت does not really have a specific purpose other than to emphasise the attached pronoun. As you may be aware, Arabic cannot always be understood through word for word translation and sometimes its rule of expression will differ from other languages.
